Ingredients:
3-4 heaped tablespoon yoghurt
2 tablespoon of fine besan (gram flour)
1 small onion
2 chopped small green chillies or whole dried chillies
2 finely chopped cloves garlic
1 inch finely chopped ginger
Condiments:
1 tsp mustard seeds
1 tsp cumin seeds
1tsp fenugreek seeds
1 tsp fennel seeds
2-4 curry leaves
Salt to taste
Recipe:
1. Mix gram flour and yoghurt in a bowl to form a uniform mixture.
2. Heat oil and add the condiments, wait till they splutter. Add chopped garlic, ginger, curry leaves, chillies.
3. Add yoghurt/ flour mix to the tempering, turmeric, red chilly powder, salt. Mix and heat till it boils. Add water to change consistency if its too thick.
4. Now lets prepare the fritters. Mix gram flour with salt and chopped red onion. I like to keep them simple and not add spices, if you want you can add garam masala, chopped green chillies and ginger to fritter mix.
5. Add water to get required batter consistency.
Add a spoon full of batter to preheated oil and deep fry till golden brown. Drain excess oil from the fritters by placing in between tissue towels.
5. Add the onion fritters to the boiling hot yoghurt sauce, mix cook for another 3-4 mins. Garnish with finely chopped cilantro and the pakora kadi is ready.
