Fried stuffed eggplant (bhare baigan)






Ingredients
8-9 baby eggplant
1/2 cup blended raw peanuts
1/2 medium onion
1-2 green chillies 
1 tsp coriander powder
1 tsp dry mango powder (Amchur)
1 tsp garam masala
Salt to taste
Oil for shallow pan fry
Recipe:
1. Blend onion and green chillies.
2. In a bowl, to the blended peanuts add blended onions/ green chillies, coriander powder, garam masala, dry mango powder, salt.

3. Cut the eggplant in the center enough to keep it all together. Now cut the first half again to have two more halves keeping the eggplant intact. Stuff the baby eggplants with above stuffing. 
4. Preheat oil in a frying pan and place the stuffed eggplant in the heated oil to cook. 


5. Simmer with closed lid and turn over the sides of eggplant to cook from all sides. 
The eggplants are ready when a sharp knife can pierce through the eggplant.
