Serves 3-4 people
Ingredients:
1 small pumpkin or 1/4 of a large pumpkin
1 small red onion finely chopped
Tempering:
1 tsp fenugreek seeds (methi/ methre)
1 finely chopped green chilly (optional)
1 tsp mustard seeds (optional)
1 tsp cumin seeds
Coriander for granish
Salt to taste
Recipe:
Finely chop onion, green chillies, and cut the pumpkin in small slices |
For tempering: To heated oil add cumin seeds, fenugreek seeds, asafoetida. |
Once the tempering is ready, add finely chopped onions and saute the onion until golden brown. |

Add the sliced pumpkin pieces and cook covered until soft. Add 1/4 cup water and cover for about 5-10 mins. Mix in between to check for water and softness. When ready the color changes and the texture is mushy. Enjoy as side dish with meat or with roti. |
