Easy and yummy: Pumpkin sabzi (Kaddu ki sabzi)






Serves 3-4 people
Ingredients:
1 small pumpkin or 1/4 of a large pumpkin
1 small red onion finely chopped
Tempering:
1 tsp fenugreek seeds (methi/ methre)
1 finely chopped green chilly (optional)
1 tsp mustard seeds (optional)
1 tsp cumin seeds
Coriander for granish
Salt to taste
Recipe:
Finely chop onion, green chillies, and cut the pumpkin in small slices

For tempering: To heated oil add cumin seeds, fenugreek seeds, asafoetida.   

Once the tempering is ready, add finely chopped onions and saute the onion until golden brown. 

Sauteed golden brown onions

Add the sliced pumpkin pieces and cook covered until soft. Add 1/4 cup water and cover for about 5-10 mins. Mix in between to check for water and softness. When ready the color changes and the texture is mushy. Enjoy as side dish with meat or with roti.
