Stuffed bitter gourd (Bhare karele)









Ingredients
6-7 small-medium bitter gourd
1 small grated onion
1 green chilly
1-2 tbsp cumin coriander powder
1-2 tbsp dried mango powder (amchur
1 tsp turmeric powder
Dried pomegranate seeds (anaar dana)
Salt to taste

Recipe:

Wash bitter gourd (karela) and chop the both the ends.

Scrape the skin of the karela.

Add salt, dry mango powder (amchur), tumeric, pomegranate seeds, cumin-coriander powder.

Add grated onion to the spice mix.

Mix the spices and onion. Prepare small portions of the mixture same as the number of the gourds.

Cut the karelas in the center and fill the stuffing inside. Roast on pan with small quantity of oil. Cover and cook. Check to avoid scalding by changing the sides of the karela for even cooking on all sides. 

Enjoy roasted karela with roti and with pakora kadhi and rice. The combination of karela- kadhi is out of this world. Very yummy!
