A bunch of leek
1-2 diced potatoes, skin removed
1-2 tomatoes
1 tbsp ginger
1 tsp cumin seeds
1 tsp turmeric powder
Pinch of Asafoetida powder (optional)
1 tsp garam masala(optional)
Salt to taste

| 1. Thoroughly clean the leeks. They have lot of mud within the whirled leaves, ensure that it is clean and free of mud. |

| 2. Dice the leeks and potatoes. |

| 3. Chop the tomatoes and ginger (or make paste) |

| 4. In preheated oil splutter the cumin seeds. |

| 5. Add asafoetida (optional) and ginger. |

| 6. Now add chopped potatoes. Cook until soft by covering with lid. |

| 7. Add tomatoes, garam masala (optional). |

| 8. Now add chopped leeks and stir. Mix and cook covered with lid on simmer till the leeks soften. |
