Homemade tahini

Ingredients:
1 cup sesame seeds
2-3 tbsp Extra virgin olive oil

Recipe:
1. Roast the sesame seeds till golden brown. This step is important to remove any moisture in the seeds and its easier to blend the seeds to obtain a paste.

2. Blend sesame seeds in the coffee mixer. I prefer making a small batch and using over few weeks. Tahini can be made fresh by using small portions of seeds and grinding using a mortar and pestle.


3. Blend till a fine powder is obtained

4. Add the olive oil to the sesame powder and mix. Depending on the desired consistency vary the quantity of olive oil. I wanted a paste consistency so I added about 2 tbsp.

5. Tahini is ready! Store in a dry glass airtight container in refrigerator. Use as a dip by mixing with lemon juice and garlic. Or to make Homemade Hummus.
