Mango stuffed bitter gourd (karela)



Ingredients:
6-7 Fresh bitter gourd
1/2 medium raw mango 
1 small onion
1-2 green chillies
1 tsp coriander powder
1 tsp turmeric powder
1 tsp red chilly powder
1 tsp fennel seeds (sauf)
salt to taste
Oil for pan frying


Recipe :
1.Blend the raw mango and onion and add the spices and salt.


2. Thoroughly wash the bitter gourd (karelas) and slit the body of karela and remove the seeds within.  *** It is optional to scrape the outside skin of karela, if you choose to do you can mix the scrapings into the mixture above. I choose not to do it to save time. Besides with above stuffing there is hardly any bitterness left in the karela.***


3. Stuff the karelas with the stuffing one by one and place them onto preheated oil in a nonstick pan. 


4. Cover and cook for 3-4 minutes. Keep an eye and turn them over to cook evenly on all sides. If some karelas are over stuffed you may find that the masala drips out. Do not worry about it. 

5. After about 10-12 minutes over medium heat the karelas are cooked. Serve with hot rotis!! Yummm!!
