Ingredients:
250 -300 gram Ivy gourd (Tindora)
1/2 medium finely chopped onion
1 finely chopped tomato
2-3 garlic cloves finely chopped
1 green chilly chopped
Condiments:
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp asafoedita (hing powder)
Salt to taste
1/2 cup water
Recipe:
1. Finely chop the onions, tomatoes and garlic. Wash the tindora under running water, drain excess water and dice the tindora into round pieces.
2. To preheated oil add cumin seeds. Wait till it splutters.
3. Add chopped garlic, turmeric and asafoedita powder.
4. Now add chopped onions, and saute the onions till golden brown.
5. Add diced tomatoes.
6. Now add diced tindora, garam masala, salt and 1/2 cup water. Cover , simmer and cook. Mix intermittently for even cooking.
7. The tindora becomes soft as below when it is done. Enjoy with a serving of fresh roti.
