Amritsari chhole (chickpeas)



Ingredients: 
1 and 1/2 cup raw uncooked chick peas soaked overnight and cooked in pressure cooker OR Garbanzo beans can washed
2-3 large tomatoes pureed
1 small onion finely chopped
1-2 fresh green chilly (optional)
Thin sliced ginger
Thin sliced round onion 

Spices:
3-4 bay leaves
6-7 cloves
4-5 whole black pepper
2-3 small sticks of cinnamon
1-2 black cardamom
1 tsp Dried mango powder (Amchur)
1 tsp turmeric powder
1 tsp home made garam masala (recipe here)
Salt to taste

Recipe:

1. In preheated oil, add all the whole spices and roast. 

2. Add finely chopped onion.

3. Add the powdered spices.

4. Add  the thinly sliced ginger and cook for 3-4 minutes till onions are cooked.

5. Add pureed tomatoes and cook till the oil oozes out. 

6. Add the boiled and cooked chickpeas, mix and cook for 10-15 minutes on medium flame. Add water according to the needed consistency. Garnish with chopped washed cilantro and lacha pyaz (roundly cut onion). Serve with hot puris, hot bhature or rice.
