Pinni recipe (Whole wheat roasted sweet)




A traditional winter sweet enjoyed by Punjabis (North Indians). Super addictive, delicious and nutritious. Best enjoyed with a glass of warm drink of your choice (milk/tea/coffee) in the mornings.

Ingredients:

1 cup khoya/ mawa
1 and 1/2 cup whole wheat flour
1 cup powdered nuts: almonds/ cashew or any nuts of your choice
2 tblp raisins
1 cup clarified butter/ghee
1 cup powdered sugar

Recipe:

1. Powder the nuts, and measure all the ingredients. Khoya/mawa may be available as  frozen 400 gm block. Cut in half (200gm) = 1 cup. Leave it to thaw on kitchen counter. Once thawed it is soft enough to crumble by hands. No tedious grating needed. 

2. Preheat ghee in a pan large enough to hold and mix all the ingredients. 

3. Add whole wheat flour. Mix and cook till the color changes and the flour gets roasted. 

4. The color of the flour changes as follows after about 5-7 minutes on medium flame. 

5. Add khoya/mawa, mix and cook for 5-7 minutes. You have to keep mixing to avoid scalding and for even cooking.

6. Add powdered nuts and washed raisins. Mix. Switch off the gas.


7. Add powdered sugar and mix thoroughly. Let it sit till it cools. 

8. When the mixture is cooled enough to touch, make the pinniyas and enjoy!! they are gone within a week at my place. Super addictive! Store in airtight container at room temperature.
