Ingredients:
1-2 bunch spinach
7-8 big cloves of garlic finely minced
200 gm homemade paneer (check my previous recipe on how to make)
1 medium onion finely chopped
1 tsp coriander powder
Salt to taste
Salt to taste
Oil for tempering
If need spicy: 2-3 fresh green chillies
If need spicy: 2-3 fresh green chillies
Recipe:
1. Thoroughly wash spinach leaves under running water in a colander.
2. Remove excess water, cut spinach into small pieces. For a smooth blended spinach add spinach to boiling water to cook the leaves for about 10 minutes or until cooked, cool and then blend in a blender.
3. In a preheated oil add cumin seeds and finely minced garlic. Stir till it turns light brown.
4. Now add chopped onions, chopped green chillies, turmeric, coriander powder, salt to taste. Cook till onion gets tender and translucent.
5. To above add blended spinach and cook for 2-3 minutes. Stir 1-3 times in between.
6. Once the spinach is blended, add the cubes of fresh homemade paneer, and cook for 2-3 minutes for the flavor to get inside the paneer.
Optional: To get the fresh green color Add 1-2 tbsp of freshy squeezed lemon juice.
