2 cups fine granulated semolina
1 cup fresh pineapple puree
4-5 tbsp clarified butter (ghee)
1 cup granulated sugar
2-3 cups water
Few black raisins
Few finely chopped almonds
Recipe:
1. Briefly roast semolina(sooji) in preheated pan to remove any moisture.
2. Add ghee to another pan and add roasted sooji till it turns light brown and you smell roasted ghee.
3. Add pineapple puree to sooji and stir to mix evenly.
4. Add sugar, and mix again. Simmer while constantly stirring. Add 2-3 cups of water and let the semolina absorb all the water. It will get soft and ghee will start oozing out of sooji. At that point the halwa is ready.
5. Garnish with raisins and chopped almonds.
6. Store in refrigerator, stays fresh for few days. Enjoy warm.
