Ingredients:
1 cup edamame pods
2/3 tbsp frozen mixed vegetables
1 1/2 cup Quinoa washed and drained
1/2 medium finely chopped onion
2 large tomatoes
1 tbsp lime juice
2 garlic cloves finely minced
Olive oil
Salt and pepper to taste
Cilantro for garnishing
Recipe:
1. Cook the edamame pods in water on medium/high.
2. Soak the quinoa in water.
3. Wash the frozen vegetables and microwave for a minute.
4. Add garlic to preheated oil and cook till golden brown.
5. Add chopped onions, cook till translucent.
6. Add chopped tomatoes and washed and drained quinoa.
7. Add the mixed vegetables and water and cook by covering with lid.
8. Separate the edamame seeds from the pod and add to the cooking soup. Cook for 5-10 minutes. Add salt, pepper.
9. Enjoy the delicious healthy soup topped with butter.
